Uovo is grammatically masculine singular (l'uovo), but its plural is the famously irregular le uova — feminine. This is a remnant of the Latin neuter plural in -a that Italian reanalysed as a feminine singular, then rebuilt a new masculine plural alongside. Learners often say gli uovi by analogy — avoid it.
