Cervello is masculine (il cervello). Its plural is notably irregular: the standard anatomical/literal plural is i cervelli, but the collective sense ('brains, grey matter') uses the feminine le cervella. È il cervello dell'operazione means 'he's the mastermind of the operation'. The 'c' before 'e' gives the 'ch' sound.
