Pane is grammatically masculine and invariable in its most common use — you say un pane for a whole loaf and del pane for some bread (partitive). The plural i pani refers to multiple loaves or types of bread. The idiom buono come il pane ('good as bread') means someone is kind-hearted; guadagnarsi il pane means to earn one's living.
