Dollaro is masculine; the plural dollari is regular. It refers primarily to the US dollar (dollaro americano) but also to other dollar currencies. In Italian the currency symbol $ follows the number in informal writing, but the word dollari is used in speech. The word entered Italian via the same German/Dutch route as English 'dollar'.
